Sweet Potato Brownies

The best combo of flavour and texture you'll come across in a Brownie. Try them once - you'll love them forever!

For enough to fill a 9x9 inch brownie tin you'll need:

320g Sweet Potato (Roasted & Mashed)
300g Dark Chocolate
160g Butter
200g Brown sugar
160g Plain Flour
1/2 tsp Baking Powder
3 Eggs
2 tsp Vanilla Extract
130g Walnuts

Perhaps it's common where you are, but in the UK we rarely use sweet potatoes outside the savoury world... but this is one of those dishes that may make you look again at the usefulness of this humble vegetable.

A delicious and impressive looking pie of marbled chocolate and sweet potato. Serve cold or warm with custard, cream or ice cream.

For a 9inch Pie Dish you'll need:

350g Shortcrust Pastry (or a deep pre-baked crust)
2 Eggs
240ml Single Cream (divided into 180ml & 60ml portions for use at different times)
75g Butter
150g Sugar (White makes for the best colour puree)
2 tsp Cinnamon
1 tsp Vanilla Extract
Pinch of Sea Salt
30g Cocoa Powder
400g Sweet Potato (Roasted & Mashed)

Delicious served cold, or warm with ice cream, cream or custard.

Sweet Potato Gratin

A mid-week treat suitable for the freezer or for preparatoin in advance. Layers of sweet potato, sweet béchamel sauce and crunchy onion with salty bacon. Delicious. Vegetarian? Leave out the bacon (Yes, some people would ask!). For two portions you'll need:

4 Bacon Rashers
1 Small Onion
1tsp Garlic
3 or 4 Sweet Potatoes (small)
40g Butter
2 tbs Plain Flour
240ml Milk
3 tbs Creme Fraiche
1 tsp Light Brown Sugar
1/2 tsp Nutmeg
Grated Parmesan Cheese
Salt and Pepper

Sweet Potato Rosti

Sweet Potatoes are one of the good carbs. Here's a way to make them more interesting - as a side dish, a base for breakfast, lunch or brunch! For 12 individual rosti you'll need:

600g Sweet Potato (Peeled & Grated)
2 Eggs
75g Butter (Melted) *use oil (half amount) if 'clean' diet or paleo.
2 Tsp Wholegrain mustard
Salt & Pepper
