Perhaps it's common where you are, but in the UK we rarely use sweet potatoes outside the savoury world... but this is one of those dishes that may make you look again at the usefulness of this humble vegetable.
A delicious and impressive looking pie of marbled chocolate and sweet potato. Serve cold or warm with custard, cream or ice cream.
For a 9inch Pie Dish you'll need:
350g Shortcrust Pastry (or a deep pre-baked crust)
240ml Single Cream (divided into 180ml & 60ml portions for use at different times)
150g Sugar (White makes for the best colour puree)
2 tsp Cinnamon
1 tsp Vanilla Extract
Pinch of Sea Salt
30g Cocoa Powder
400g Sweet Potato (Roasted & Mashed)
Delicious served cold, or warm with ice cream, cream or custard.
